Cavolfiore arrosto in salsa - Vegan roasted cauliflower with tomato gravy
Ingredienti:
1 cauliflower
salt
1 onion
dill weed
chilli pepper
turmeric
3 tomatoes
tomato sauce / passata
methi powder
garam masala
1/2 pot of creamy soy yogurt or vegetable cream (soy, oats) or a handful of blended cashews (soaked overnight)
1) cover a whole cauliflower with water + spices (1 tsp chilli crushed or powder, 1 tsp turmeric, 1 tsp salt). Bring to boil and cook 4 min each side.
Drain and place in a oven dish.
2) cook the gravy. Half can of tomato passata, 3 fresh vine tomatoes chopped, 1 onion chopped and cook until tender with the spices ( Fresh garlic, 1 tsp methi powder, 1 tsp dill weed, 1/2 tsp garam Masala, kosher salt). Add 1 tbsp of grated pure creamed coconut and half pot of creamy soy milk or any vegetable cream same amount).
3) Blend. The gravy must be thick, if running cook a little more.
4) cover with 2/3 of sauce and cook at 200 degrees for 40 min or until gravy is dried.
